Kent Sport Bake Off: Jeni’s double trouble

Jeni Dexter-Mullane, Health, Fitness and Performance Manager, couldn’t decide which bake from Good Housekeeping to submit – so she submitted two! Enjoy this 3-ingredient orange cake as well as this yummy Easter no cheese cheesecake.

Easter no cheese cheesecake Easter eggs

Ingredients
2 Easter eggs I used Milk chocolate
1 condensed Milk
300ml Double cream
80g melted butter
2 bars or 220g chocolate
200g Digestive biscuits
Directions
  • Melt your butter in the microwave or Hob, keep watch
  • Crush the biscuits in a bowl and mix in butter
  • Melt your chocolate in the microwave or hob, keep watch
  • Once melted add condensed Milk and Cream, mix all together
  • Finally, get your eggs in half pop some biscuits in and then add the cooled chocolate and add crushed mini eggs on the top (not hot mixture otherwise it melts the eggs). Wait until cooled put over a bowl of ice to cool down keep stirring don’t leave otherwise hardens and cant pour into your eggs)
  • Pop in the fridge for 2-3 hours
  • Yum!

Orange Loaf

This Cake recipe only needs three things and is also egg-free.
Ingredients
2 Jaffa Oranges
220g Self raising flour
397g Condensed Milk tin
Directions
  • Finely grate the zest from 1/2 of one of the oranges into a small bowl and cover with damp cloth Boil the two oranges in a high sided pan for 1 hour until the skin is very soft. Keep oranges submerged with glass bowl or lid Drain and cool.
  • Preheat the oven to 190c(170 fan) mark 5
  • Line a 900g (2lb) loaf tin with baking paper.
  • Halve the deseed oranges
  • Whizz oranges in a blender until smooth
  • Whisk together 3/4 of the pureed orange, self-raising flour and all but one tablespoon of condensed milk ( saving this for the glaze)
  • Place in the tin and bake for 45mins and until a skewer comes out of the cake clean
  • Brush over or pour the reserved condensed milk (when loaf cooled) and scatter the zest over the loaf to finish
  • When pouring makes sure on a plate!
  • Remaining puree add to yogurt and serve with loaf on the side
