Kent Sport Bake Off: Mariah’s GF doughnuts

Mariah Young, Marketing Assistant, felt inspired to do some baking of her own after seeing the fitness team produce some fancy bakes. Recently diagnosed as Coeliac, she wanted to share an easy-to-bake gluten free doughnut that happens to be vegan too!

Vegan and Gluten Free doughnuts

 

Ingredients
  • 200 g gluten free self raising flour (add 1tsp baking powder if your GF flour isn’t self-rising)
  • 120 ml almond milk
  • 6 tbsp maple syrup
  • 4 tbsp coconut oil melted

topping options

  • 3 tbsp cacao powder
  • Pinch salt

or

  • 3tbsp icing sugar
  • 1tsp almond milk

or

  • 1tbsp sugar
  • 1tsp cinnamon
Directions
  • Pre heat your oven to 180C
  • In a large mixing bowl add the gluten free flour, 4 tbsp maple syrup, 2 tbsp melted coconut oil and the milk and mix well into a smooth batter
  • Grease your doughnut mould with coconut oil and add the batter into each mould making sure to smooth over the top
  • Add to the oven for 12-15 minutes (depending how hot your oven runs)
  • Meanwhile prepare your topping choice. I chose cinnamon sugar mixture as well as the glaze’ since I’m not a huge chocolate fan.
