{"id":5487,"date":"2020-04-09T11:49:45","date_gmt":"2020-04-09T10:49:45","guid":{"rendered":"http:\/\/blogs.kent.ac.uk\/kentsport-news\/?p=5487"},"modified":"2020-04-09T11:49:45","modified_gmt":"2020-04-09T10:49:45","slug":"kent-sport-bake-off-vickys-yorkshire-tea-cakes","status":"publish","type":"post","link":"https:\/\/blogs.kent.ac.uk\/kentsport-news\/kent-sport-bake-off-vickys-yorkshire-tea-cakes\/","title":{"rendered":"Kent Sport Bake Off: Vicky&#8217;s Yorkshire Tea Cakes"},"content":{"rendered":"<p>Kent Sport Physiotherapy Clinic Manager, Vicky Annis, has gone back to her routes with these fruit-filled teacakes are a great favourite across the region and are best served split, toasted and spread with butter \u2013 delicious!\u00a0 They can be made by hand, or in an electric breadmaker.<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>300 ml milk<\/li>\n<li>1lb (450g) white bread (strong) flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>25g caster sugar<\/li>\n<li>25g butter or margarine<\/li>\n<li>50g currants<\/li>\n<li>2 teaspoon dried yeast, or 15g\u00a0fresh yeast<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Mix all the dry ingredients; rub in the butter or margarine<\/li>\n<li>Mix the yeast with the tepid milk and leave in a warm place until it froths<\/li>\n<li>Blend the milk and yeast with the dry ingredients and knead the dough thoroughly\u00a0until it feels elastic and is no longer sticky (around 10 minutes)<\/li>\n<li>Leave the dough in a warm place until it has risen to roughly double its original size<\/li>\n<li>Divide the dough into around 8 portions shape into balls. Flatten out each ball into a disc about 1cm (half-inch) thick<\/li>\n<li>Place the discs on a greased baking\u00a0tray about 1in\/2.5cm apart. Cover them with oiled\u00a0clear film or clean damp tea-towel and leave in a warm place to rise until\u00a0the\u00a0discs are\u00a0almost double in size<\/li>\n<li>Brush the tops with milk and bake in a pre-heated oven to 200C\/400F\/Gas 6 for 15-18 minutes, or until golden.<\/li>\n<li>Turn out on a wire rack and leave to cool slightly.
